One of my least favorite things to do is to plan what to cook for dinner. I hate it. I will waste so much time looking for a new recipe, only to come up with nothing. I don't know what it is. Well, I think having a moderately picky husband and being a dietitian adds to the difficulty. Anyway, yesterday was one of those days. I spent the afternoon on the internet instead of taking a much wanted nap. However, this time I was successful! I started by looking for a recipe with ground beef since chicken is not my favorite thing these days. I also had a hankering for some cornbread after Giada made some on her show last weekend. And of course, it had to be easy.
This recipe fit the bill! It's by no means an elegant "impress your friends and family" kind of meal. But it's perfect for a weeknight, comforting, tasty, and easy meal. Especially if tacos from a box is your husband's favorite, and your least favorite, dinner. And there were very little dishes to clean! I thought I would share this recipe to hopefully save someone else a little time in deciding what to cook one night for dinner.
I used no-added-salt corn since there is plenty of sodium in the taco mix and cheese. I also think I may add some rinsed beans next time to up the nutrition factor.
And in case you were wondering, today is my due date (which is so hard to believe... after watching the ticker on my blog for months, it actually says 40 weeks today!). However, I was still not dilated at all when I went to the doctor on Wednesday. (By the way, I've been walking 2 miles at least 4 times a week for over a month. So walking does not help start labor!) Our plan is to have an ultrasound on Monday to make sure Harper and the placenta are still doing well, and then I will be induced on Thursday, the 15th, if I still haven't gone into labor on my own. Harper is ready. She's been head down and very low for weeks. It will be interesting and exciting to see what happens in the next few days...

Monday would be a great day for you to arrive. We are all anxiously waiting to meet you! Kevin and I so badly want to come see you in the hospital, so please come soon so I can hold you!
